Happy Superbowl Sunday everyone! You certainly wouldn’t say that I am the biggest football fan (unless my son is on the field!) but I do enjoy hearing the game in the background as I feast on the various foods offered at my brother’s annual Superbowl party. The women and children usually stay upstairs while the men watch the game on the big screen downstairs. I was going to make my yearly Buffalo Chicken Dip but went with another family favorite: 7 Layer Taco Dip. It’s so easy to make and really yummy!
You will need lettuce, plum tomatoes (not as seedy when you chop them), green onions, cream cheese, sour cream, shredded cheese (we used a Monterey Jack blend this time), black olives, refried beans, a packet of taco seasoning mix and salsa. Lots of ingredients but it all comes together 1-2-3.
First you mix your beans with the seasoning mix. That’s layer #1.
Then you blend your cream cheese with the sour cream. I used hand-held beaters this time and even added in a smidge of salsa. That’s all my own weirdness though because I don’t like sour cream or cream cheese, so I had to give this layer some redeeming quality. That’s layer #2.
Dump on the salsa and spread evenly. That’s layer #3.
Layer #4 is all of your tomatoes, chopped.
Layer #5 is your green onions cut into little rings.
Layer #6 is your lettuce. You only really need half a head of iceberg and you need to cut it small. Don’t forget this will be scooped out using chips so you don’t want big lettuce leaves in there.
And the final layer is your cheese. That’s layer #7.
The olives are really for garnish, or layer 7 1/2 if you will.
I used a big plastic white serving bowl I picked up at the grocery store years ago. It’s quite large and this dip fits perfectly in there. It’s also not too deep, which is important. You want people to scoop out all of the layers in one try, not have to dig around, so using a large, shallow bowl is a good idea.

7 Layer Taco Dip
1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa
3 plum tomatoes, chopped
1 bunch chopped green onions
1/2 head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained & sliced
2 cups shredded cheese, Cheddar or Monterey Jack
assorted chips for dipping
1. In a small bowl, combine beans with taco seasoning. Spread onto the bottom of your serving platter / bowl.
2. In another bowl, mix cream cheese & sour cream. Spread over bean layer.
3. The 3rd layer over the sour cream should be your salsa.
4. 4th layer is chopped tomatoes.
5. 5th layer is the green onions.
6. 6th layer is the lettuce.
7. 7th layer is the cheese. Use olives as garnish. Serve with chips on the side.
